Chicken & Rice Casserole

This recipe comes from Halfmysize.com and is it awesome!!! The original recipe calls for regular rice but I don't have that so I used brown rice and got no complaints from The Hubby. Add a side of steamed fresh broccoli and you have a simply wonderful comfort food meal for a chilly evening.

Chicken and Rice Casserole
Serves 6 @ 7 WW points each

2 c. cooked brown rice
2 c. Kraft 2% reduced fat cheddar cheese
2 c. chopped cooked chicken breast
12 oz. fat-free evaporated milk
1/2 c. egg substitute
2 T. light margarine, melted
salt & pepper to taste

Preheat oven to 350°. Lightly grease a 9 x 13" baking dish. Combine all ingredients. Mix well. Bake 45 minutes.

The original recipe served 8 at 5 points each in case you are looking for a smaller portion. Not me baby!
